Cristine Bedfor places its trust in this Sevillian chef, a young voice who reinterprets Andalusian tradition with sensitivity and great respect for local produce.
GASTRONOMIC PROPOSAL
A cuisine that preserves the history of the peoples who have left their mark on the city. It maintains Arab influences that can be sensed in its aromas and preparations, together with the character of the south, where the simplicity of the ingredients becomes a rich experience designed to be shared.
STARTERS

A selection that combines exceptional produce and recipes balancing tradition and creativity. From acorn-fed Iberian ham and cured cheese to fresher options such as salad or beet hummus, each dish offers contrast and flavor.
The menu is completed with Andalusian classics such as huevos a la flamenca (baked eggs with vegetables) or fried anchovies, alongside more contemporary creations.

Sevillian gastronomy, deeply rooted in Andalusian tradition, combines fish, meat, vegetables and spices that evoke its history, resulting in intense, nuanced flavors. On our menu, this essence is reflected in meats such as presa ibérica (Iberian pork shoulder) or braised cheeks, and fish such as meagre or wild sea bass.
DESSERTS

A sweet selection that combines tradition and creativity, where chocolate, citrus fruits and southern aromas take center stage. Soft textures and balanced contrasts shape a delicate finale, designed to be enjoyed unhurriedly and to share the very last bite.
